  • 2 sheets shortcrust pastry
  • 200g ricotta cheese
  • 2 tbsp light cream
  • 1 tbsp parmesan cheese, grated
  • 600g sweet potato, cooked and mashed
  • 6 slices eggplant, chargrilled and cut in half
