Ingredients
- 2 ears of corn
- 1 small carrot, diced small
- 1/2 cup chopped spring onion
- 2 cloves minced garlic
- 1 Tbs finely chopped onion
- 3/4 cup gluten-free flour
- 2 Tbs rice flour
- 1/4 tsp salt
- 1/4 tsp black salt
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- 1/4 tsp black pepper
- 1/2 cup So Good Soy Regular
- 2 tsp grapeseed oil (if baking)
- 6 tsp grapeseed oil (if pan frying)
- Handful of cilantro (for topping)

Method
Baking: 1. Pre-heat the oven to 180 degrees Celsius 2. Cut the corn from the cob and place in a bowl in the carrot, onion, spring onion, and garlic, then mix. 3. In a separate bowl mix all the dry ingredients. 4. Add in the dry mix into the vegetable mix until we coated. 5. Add in the So Good Soy Regular until well mixed, then add in the grapeseed oil. 6. Spread 1/4 cup patties into a non-stick mat on a baking tray. 7. Bake for 20 minutes. 8. Top with cilantro.Pan Frying: 1. Cut the corn from the cob and place in a bowl in the carrot, onion, spring onion, and garlic, then mix. 2. In a separate bowl mix all the dry ingredients. 3. Add in the dry mix into the vegetable mix until we coated. 4. Add in the So Good Soy Regular until well mixed. 5. Pre-heat a pan to medium-low heat, place 1/2 tsp oil. 6. Spread 1/4 cup patties and cook until golden brown, then flip and cook the other side. 7. Repeat for all of the batter. 8. Top with cilantro.
