Ingredients
- 2 cups rolled oats
- 1 cup unsalted nuts or seeds
- 2 Weet-Bix™, roughly crushed
- 1/4 cup peanut butter, natural
- 1/4 cup olive oil
- 1/4 cup honey or golden syrup
- 1/2 tsp salt
- 1 tsp vanilla essence
To serve
- natural yoghurt or milk/ non-dairy milk of choice
- fresh fruit

Method
- Preheat oven to 160°C. Line a large rimmed oven tray with baking paper.
- Combine dry ingredients in a large bowl and mix well. In a jug, whisk together peanut butter, oil, syrup, salt, and vanilla, until smooth.
- Pour wet mixture over dry and stir until all ingredients are evenly coated. Spread into an even layer on the prepared tray.
- Bake 10 mins, then stir gently to move edges into centre and centre out to edges. Bake a further 15 - 20 mins, stirring every 5 minutes until evenly golden.
- Remove pan from oven, press granola down with a spatula and allow to cool completely on trays. Break into clusters once cool. Store in an airtight container in the pantry.
