A fresh, delicious and satisfying meal idea. Make the felafel patties and hummus in advance, and take them along to enjoy at your next family picnic.
Ingredients
Felafel
- 425g can chickpeas or 2 cups cooked chickpeas
- 1 large onion
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 pinch chilli powder
- 1 tsp crushed garlic
- ½ tsp salt
- ½ cup wholemeal plain flour to coat
- 1 tbs olive oil
Hummus
- 1 ½ cups cooked chickpeas
- 3 tbs tahini paste
- 3 tsp crushed garlic
- 3 tbs lemon juice
- 2 tbs water
Serve with
- 4 wholemeal pita bread
- 2 tomatoes, sliced
- 2 lettuce leaves
- 4 tbs hummus
- red onion

Method
- Felafels - blend chickpeas, grate onion and place in a bowl with spices, crushed garlic and salt. Form tablespoons of mixture into patties and fry both sides until golden brown.
- Hummus - place all ingredients in a food processor and process until smooth.
- Assembly - place lettuce in the centre of the pita bread. Add 2 halved felafels, then top with tomato slice and red onion. Drizzle hummus over the top and roll up the bread.
