Ingredients
1 cup glutinous rice 1 cup water 3 pandan leaves 2 cups light coconut milk 1 cup So Good Soy Regular Milk 1/2 cup coconut sugar Pinch of salt Grape seed oil (for lining your pan)
Method
- Pre-heat oven to 200 degrees Celsius.
- Rinse and strain your glutinous rice
- Place 1/2 cup of water, 1 cup coconut milk, and the glutinous rice into a pot with the pandan leaves. Bring to a boil then simmer for 5 minutes.
- In a separate pan, add in 1 cup coconut milk, So Good Soy Regular Milk, coconut sugar and salt.
- Mix and bring to a boil and simmer for 5-10 minutes or until thick.
- Remove the pandan leaves from the rice, add in most of the sauce mixture, leaving some for the top, and mix until well incorporated.
- Oil or butter a baking pan and transfer the rice mixture and spread evenly.
- Pour in the rest of the sauce and spread.
- Place in the oven and bake for 20-30 minutes.
