Enjoy this delicious crisy chicken-style wrap, with fresh salad greens and zingy tzatziki dressing as a quick and easy lunch option.
Ingredients
- 2 Vegie Delights™ Chicken-Style Burgers
- 1 tbs olive oil
- 1 red onion, sliced
- 1/3 cup white vinegar
- 2 handfuls fresh baby spinach
- 2 handfuls fresh rocket
- 1 Lebanese cucumber, in ribbons
- 8 fresh mint leaves
- 2 large multigrain wraps
Tzatziki
- ½ cup reduced fat natural yoghurt
- 1/2 Lebanese cucumber, grated
- 2 garlic cloves, crushed
- Olive oil drizzle

Method
- In a small bowl, mix together the ingredients under ‘tzatziki’ and taste. Season accordingly.
- In a small bowl, place sliced onion and pour over vinegar. Leave to pickle and drain just before assembling the wraps.
- Heat a small pan with olive oil over a medium-high heat. Add Chicken-Style Burgers and cook for 15 minutes, turning once until golden on each side. Slice into strips.
- Warm wraps and smear tzatziki in the middle of each wrap. Top each wrap with baby spinach, rocket, cucumber, mint, pickled onion and a chicken style burger.
