Ingredients
- 1 pack Vegie Delights™ Vegie Sausages
- 1/3 cup mild tikka masala paste
- 1 tbs olive oil
- 1 small onion, diced
- 2 cm piece ginger, finely grated
- 2 cloves garlic, crushed
- 1 carrot, diced
- 2 cups cauliflower florets (1/2 medium head)
- 1 x 400 g tin no added salt diced tomatoes
- 1/4 cup water
- 1/2 cup plain low-fat Greek style yoghurt
- Salt & pepper, to taste
To serve
- 2 cups steamed white rice
- Fresh coriander leaves

Method
- Cut each vegie sausage into 4 even pieces. Combine sausages and tikka masala paste in a bowl and mix well.
- Drizzle oil into a large skillet over medium heat. Add onion, ginger, and garlic, and cook 3 - 4 minutes, until starting to soften.
- Add sausages and tikka masala paste to the pan. Cook for a minute or two, stirring regularly, until the paste is fragrant.
- Add the carrots, cauliflower, tomatoes and water. Stir well to combine, cover pan, and simmer for 10 minutes, until the vegetables start to soften.
- Add yoghurt and gently stir through. Season to taste.
- Serve tikka masala over rice, and garnish with fresh coriander leaves.
