Spicy Summer Rolls

    Ingredients

    • 415g can Vegie Delights™ Nutolene, mashed
    • 1 tbs olive oil
    • 3 garlic cloves, chopped
    • 3 tsp fresh ginger, peeled & grated
    • 1 tbs red Thai curry paste
    • 1 tsp turmeric
    • 2 tbs brown sugar
    • 1 tbs salt reduced soy sauce
    • 1 large red chilli, chopped
    • ¼ cup fresh coriander
    • ¼ cup fresh mint leaves
    • 2 spring onions, sliced
    • 1 lime, juiced
    • 1 pack rice paper
    • 1 carrot, peeled and cut into sticks
    • 2 cups lettuce, shredded
    • Dipping sauce of your choice

    Method

    1. Step 1

      Fry garlic and ginger in pan with a little oil until it’s starting to colour

    2. Step 2

      Add curry paste and fry for another 1-2 mins, stir continuously

    3. Step 3

      Add Vegie Delights Nutolene and continue to fry for another 5 mins or until crisp and brown

    4. Step 4

      Stir in turmeric, brown sugar, and soy sauce, and pour into bowl to cool

    5. Step 5

      Once cool stir in coriander, mint, spring onion, chilli and lime juice

    6. Step 6

      To assemble, soak rice paper in warm water until soft. Place spoonful of Nutolene mixture onto rice paper. Top with lettuce and carrot. Fold to make an envelope, and roll. Serve with dipping sauce of your choice
