Macadamia and lime biscotti

    • 1 1/2 cups white plain flour
    • 1 cup wholemeal plain flour
    • 2 1/2 teaspoons baking powder
    • 3/4 cup caster sugar
    • 3 eggs, lightly beaten
    • Juice and rind of 2 limes
    • 1 cup whole raw macadamia nuts


    1. Sift flours, baking powder and sugar in a bowl and mix well. In a separate bowl, combine eggs, lime juice, lime rind and nuts.
    2. Add egg mixture to dry ingredients and stir to form a dough.
    3. Turn dough onto floured surface, divide in 2 and shape into 2 logs. Place logs on a greased and floured tray and bake in a hot oven (200°C) for 15 minutes.
    4. Allow logs to cool completely. Cut into thin slices. Spread in a single layer on a baking tray and return to a slow oven (150°C) for 10 minutes or until firm and golden.
