Finely chopped quinoa salad

    Ingredients

    • 1 cup cooked quinoa
    • 1 finely chopped cucumber
    • 1 finely chopped red capsicum
    • 1 cup halved cherry tomatoes
    • 1/4 cup sliced Kalamata olives
    • 100g crumbled feta cheese
    • 2 tbsp extra virgin olive oil
    • 1 tbsp lemon juice
    • 1/2 tsp dried oregano

    Optional garnish:

    • Chopped fresh parsley

    Method

    1. In a large bowl, combine quinoa, cucumber, red capsicum, cherry tomatoes, Kalamata olives, and feta cheese.
    2. In a small bowl, whisk together extra virgin olive oil, lemon juice, and dried oregano.
    3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
    4. Serve the quinoa salad immediately, garnished with chopped fresh parsley, if desired.
