Pink lady coconut cream

    Delicious and simple cream that even allows those who are dairy free to enjoy the delights of whipped cream.


    • 425g can pink lady apples in natural juice
    • ½ cup brazil nuts
    • ½ tsp vanilla essence
    • ½ cup lite coconut cream


    1. Place all ingredients into a blender and blend till smooth.
    2. Store in refrigerator in a glass jar. Makes 22 tablespoons.


    • This nut cream is an awesome dairy free substitute for cream or yoghurt. Can be used over muesli, fruit or as a dip.
    • Use sparingly as coconut is a significant source of saturated fat.
