- 1 tbs sunflower oil
For the black bean mix:
- 1 tbs sunflower oil
- 1 tsp ground cumin
- 1 tsp paprika
- 400g black beans, drained
- 1 tbs marmite
For the topping:
- 150g grated Edam cheese
- ½ cup shredded lettuce
- 1 tomatoes, diced
- ½ red capsicum, diced
- ½ small red onion, diced
- Handful of coriander leaves, to sprinkle
For the avocado cream:
- 1 ripe avocado
- 100g low fat yoghurt
- Handful of coriander, stalks roughly chopped (set aside leaves for garnish)
- 1 lemon or lime, zest and juice
