- 1 tbs oil
- 1 onion, chopped
- 1 carrot, chopped
- 1/2 tsp dried italian herbs
- 1 cup sliced mushrooms
- 690g bottle passata sauce
- 2 x 425g can brown lentils, rinsed and drained
- 375g packet commercial gnocchi
- 1/2 cup grated cheese

Italian lentil hotpot

Ingredients
Method
- Heat oil in a large pot and saute onion and carrot until just soft.
- Add italian herbs and mushrooms and saute for 1 min.
- Stir through passata sauce and lentils. Bring mixture to boil then reduce heat and simmer for 10 mins until sauce is slightly thickened.
- Bring large pot of water to boil and add gnocchi. When gnocchi comes to surface of water remove and drain.
- Place lentil sauce in a casserole dish and top with gnocchi. Sprinkle with cheese.
- Place under griller and grill until cheese is melted.
Tips
- Replace gnocchi with mashed potato or sweet potato for a more traditional option.
