Creamy sweet potato (kumara) pasta

    A tasty sweet potato (kumara) pasta with a delightfully creamy texture. High in calcium, fibre and protein, this is a simple dish that is good for you as well.

    • 250g pasta, cooked
    • 400g sweet potato (kumara), peeled and chopped
    • 2 tbs oil
    • 1 onion, chopped
    • 1 clove garlic, finely chopped
    • 1 tsp vegetarian green curry paste
    • 250ml evaporated milk
    • salt and pepper to taste


    1. Brush sweet potato (kumara) with oil and roast, in a hot oven, 220°C for 35 minutes or until soft.
    2. Saute onion, garlic and curry paste in 1 tsp oil. Add the sweet potato (kumara) and remaining ingredients. Simmer until liquid is slightly reduced and season to taste.
    3. Serve over cooked pasta.


    • Be sure to check the ingredients list to ensure the curry paste is vegetarian. 
    • To make this sweet potato pasta gluten free, simply use gluten free pasta instead of wheat pasta. Remember to always check the label of each ingredient to ensure it is gluten free.
