Schnitzel wellness bowl

Ingredients

  • 2 Vegie Delights Schnitzel

  • 300g sweet potato, peeled and cut into 3cm chunks
  • 1 cup quinoa, cooked
  • 1 bunch asparagus, trimmed
  • 200g broccoli, rinsed and cut into small florets
  • Black pepper

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice

Method

  1. Preheat oven to 180⁰c and line a baking tray with greaseproof paper. Place Vegie Delights Schnitzel pieces on tray and place in oven to cook for 10-12 minutes, turning halfway through cooking time.
  2. While schnitzel is cooking, bring a medium saucepan with steamer basket to the boil, add sweet potato chunks and cook for 5-6 minutes, remove from basket, cover and set aside, then add asparagus and broccoli and cook for 2-3 minutes.
  3. Whilst vegetables and schnitzels are cooking, in a small bowl whisk together all ingredients for the dressing.
  4. Once Schnitzels are cooked, slice and then divide Schnitzel pieces, quinoa, and veggies between two bowls.
