Ingredients
- 2 Vegie Delights Schnitzel
- 300g sweet potato, peeled and cut into 3cm chunks
- 1 cup quinoa, cooked
- 1 bunch asparagus, trimmed
- 200g broccoli, rinsed and cut into small florets
- Black pepper
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon tahini
- 1 tablespoon lemon juice
- 1 tablespoon orange juice
Method
- Preheat oven to 180⁰c and line a baking tray with greaseproof paper. Place Vegie Delights Schnitzel pieces on tray and place in oven to cook for 10-12 minutes, turning halfway through cooking time.
- While schnitzel is cooking, bring a medium saucepan with steamer basket to the boil, add sweet potato chunks and cook for 5-6 minutes, remove from basket, cover and set aside, then add asparagus and broccoli and cook for 2-3 minutes.
- Whilst vegetables and schnitzels are cooking, in a small bowl whisk together all ingredients for the dressing.
- Once Schnitzels are cooked, slice and then divide Schnitzel pieces, quinoa, and veggies between two bowls.
