Yoghurt dip 'n' fruit

    A healthy alternative snack for the kids school lunchboxes or after school snack.

    Ingredients

    • ½ cup natural yoghurt
    • 2 tbs dried apricots, chopped
    • 2 tbs pistachios, chopped
    • 1 red apple, thinly sliced

    Method

    1. Place yoghurt, apricots and pistachios in a bowl, mix to combine.
    2. Place into bowl and eat with sliced apple.

    Tips

    • This can be added to lunch boxes by simply spooning into a small plastic container with a spill-proof lid. Dampen a paper towel and sprinkle with lemon juice then wrap around sliced apple to prevent discolouration.
