Spicy Summer Rolls

    • 415g can Vegie Delights Nutolene, mashed
    • 1 Tbsp of sunflower oil
    • 3 garlic cloves, chopped
    • 3 tsp of fresh ginger, peeled & grated
    • 1 Tbsp of red Thai curry paste
    • 1 tsp of turmeric
    • 2 Tbsp of brown sugar
    • 1 Tbsp of salt reduced soy sauce
    • 1 large red chilli, chopped
    • ¼ cup of fresh coriander
    • ¼ cup of fresh mint leaves
    • 2 spring onions, sliced
    • 1 lime, juiced
    • 1 pack of rice paper
    • 1 carrot, peeled and sliced
    • 2 cups of lettuce, shredded
    • Dipping sauce of your choice


    1. Fry garlic and ginger in pan with a little oil until it’s starting to colour
    2. Add curry paste and fry for another 1-2 mins, stir continuously
    3. Add Vegie Delights Nutolene and continue to fry for another 5 mins or until crisp and brown
    4. Stir in turmeric, brown sugar, and soy sauce, and pour into bowl to cool
    5. Once cool stir in coriander, mint, spring onion, chilli and lime juice
    6. To assemble, soak rice paper in warm water until soft. Place spoonful of Nutolene mixture onto rice paper. Top with lettuce and carrot. Fold to make an envelope, and roll. Serve with dipping sauce of your choice
