Ingredients: 2 tsp olive oil; 2 limes, juice only; ½ tsp salt; 2 tsp brown sugar; 2 tsp soy sauce, salt-reduced; ¼ tsp chilli flakes, optional; ½ cup unsalted peanuts, roughly chopped; half of a medium green papaya peeled and grated (250g); 1 carrot, peeled and grated; 1 small red onion, finely diced; ½ cup mint leaves, torn; ½ cup basil leaves, torn

A delicious high fibre, lactose/dairy free side dish that's great for livening up family gatherings or even a quick mid-week meal.

Ingredients

2 tsp olive oil
2 limes, juice only
½ tsp salt
2 tsp brown sugar
2 tsp soy sauce, salt-reduced
¼ tsp chilli flakes, optional
½ cup unsalted peanuts, roughly chopped
half of a medium green papaya peeled and grated (250g)
1 carrot, peeled and grated
1 small red onion, finely diced

½ cup basil leaves, torn

Method

Place sliced red onion in a bowl of cold water (this helps to reduce the pungent flavour and strong aftertaste). Set aside while you prepare the dressing.
In a bowl combine oil, lime juice, salt, brown sugar, soy sauce and chilli flakes. Drain onions and add to bowl with dressing.
Reserve a few fresh herbs and peanuts for garnish. Add grated papaya and carrot, remaining herbs and peanuts to the dressing, stir well to coat
To serve, place salad on a plate, top with remaining mint, basil and nuts.
