Classic Burger with Sweet Potato Chips

    Ingredients

    • 1 tbs olive oil 

    • 1 pack Vegie DelightsTM Smokey BBQ Burgers 

    • 4 wholemeal bread rolls 

    • 4 slices reduced fat cheddar cheese of choice 

    • 1 small, sweet gherkin, sliced 

    • 2 medium tomatoes, sliced 

    • 2 cups rocket  

    • 1 tbs American style mustard 

    • 1 tbs chipotle aioli 

    Sweet Potato Wedges 

    • 2 large, sweet potato, thicky sliced into wedges 

    • 1 tbs olive oil 

    Method

    1. Preheat oven to 220C.  For the sweet potato wedges, toss cut up sweet potato in olive oil and then spread evenly onto a baking tray lined with baking paper.  Bake until cooked through and browned, 30 minutes.  
    2. Preheat frypan or BBQ plate to medium heat.  Add oil and cook burgers according to pack directions. Remove from heat. 
    3. Top base of bread roll with a burger patty, cheese and then some gherkin.  Finish with tomato slices, rocket and sauces.  Serve with sweet potato wedges and enjoy.
