- 1 tbs olive oil
- 1 onion, chopped
- 2 cloves of garlic, crushed
- 1 Vegie Delights™ Vegie Sausages, sliced
- 1 red capsicum, chopped
- 250g cherry tomatoes, halved
- 1 400g tin no added salt chopped tomatoes
- 2 tbs drained capers
- 100g pitted Kalamata olives
- 1 tsp dried mixed herbs
- 300-400g cooked wholemeal pasta
- Fresh basil leaves, chopped, to serve

Step 1
Heat the olive oil in a large pan and sauté the onion and garlic for a few minutes until softened.Step 2
Add the vegie sausage slices, capsicum and cherry tomatoes and fry for a few minutes so that the vegie sausage slices are browned slightly.Step 3
Add the tinned tomatoes, capers, olives and dried herbs and simmer for 15 - 20 minutes, so that the sauce reduces and starts to thicken together.Step 4
Pour in the pasta to heat through and top with fresh basil to serve.
