Beetroot hummus & carrot spread

    Ingredients

    • 2 Weet Bix™ Cholesterol Lowering
    • 2 tbs beetroot hummus
    • 1 medium carrot, grated
    • 1/2 tsp apple cider vinegar
    • 1 tsp za’atar, or dukkah

    Method

    1. Toss carrot in apple cider vinegar and set aside for 2 minutes.
    2. Spread Weet-Bix with hummus, top with pickled carrot and sprinkle with za’atar.

    Tips

    • Za’atar and dukkah are Middle Eastern spice and sesame seed blends. They can be found in the spice aisle of your local supermarket.
    • Buy beetroot hummus from the supermarket or make it yourself.
