Apple banana fritters

    A great alternative to traditional doughnut, these lovely crispy treats are made using apple and banana. 

    Ingredients

    Vanilla yoghurt:
    • ½ cup lite Greek yoghurt
    • 1 teaspoon vanilla essence 
    Fritters:
    • ¼ cup plain flour
    • ¼ cup cornflour
    • ¼ teaspoon cinnamon
    • 2 eggs, beaten
    • 2 tablespoons milk
    • 1 large firm apple
    • 2 firm bananas
    • Oil spray
    • 1 tablespoon icing sugar
    • 1 tablespoon toasted sesame seeds
    • ¼ teaspoon cinnamon

    Method

    1. Mix together the yoghurt and vanilla essence to make Vanilla yoghurt cream. Refrigerate until needed.
    2. Combine the flour, cornflour, cinnamon, eggs and milk in a bowl and mix to form a smooth, thick batter.
    3. Peel and core the apple and cut into wedges. Peel the bananas and cut lengthwise from top to bottom. Then cut in half across the middle to leave the banana in four pieces.
    4. Heat a non-stick frying pan until hot, then spray with a small amount of oil.
    5. Dip each piece of fruit into the batter, coating well. Lift out a piece of fruit at a time, using a slotted spoon or a toothpick to drain off any excess batter. Fry each batch for about 1 minute each side until golden.
    6. Combine the icing sugar, sesame seeds and second measure of cinnamon together in a small bowl and then sprinkle over the fruit. Serve immediately with Vanilla yoghurt.
