Ingredients
- 250g pasta, cooked
 - 400g sweet potato (kumara), peeled and chopped
 - 2 tbs oil
 - 1 onion, chopped
 - 1 clove garlic, finely chopped
 - 1 tsp vegetarian green curry paste
 - 250ml evaporated milk
 - salt and pepper to taste
 
Method
Step 1
Brush sweet potato (kumara) with oil and roast, in a hot oven, 220°C for 35 minutes or until soft.Step 2
Saute onion, garlic and curry paste in 1 tsp oil. Add the sweet potato (kumara) and remaining ingredients. Simmer until liquid is slightly reduced and season to taste.Step 3
Serve over cooked pasta.
