Ingredients
- 1 cup black rice
- 3 cups water
- 4 cups water, extra
- 400g can coconut milk, reduced fat
- 1 tablespoon honey
- ½ teaspoon vanilla
Method
Step 1
Soak rice overnight in water. Rinse and drain.Step 2
Place soaked rice and extra 4 cups water in a saucepan. Bring mixture to the boil, then reduce heat and simmer for 20 minutes, stirring every few minutes.Step 3
Add remaining ingredients and simmer for further 10 minutes.Step 4
Garnish with nuts, seeds and fruits of choice. Serves 6.
