150g sweet potato
¼ cup tapioca starch
½ cup water
2 tbs coconut sugar
2 pandan leaves
¼ cup So Good Almond Unsweetened Milk
2 Tbs low fat coconut milk
pinch of salt
Method
- Steam or boil the sweet potato until soft.
- Mash the sweet potato until free of lumps.
- Add in the tapioca starch and mix until well combined and you have a firm dough.
- Divide and roll into 1-inch balls.
- Add 1 liter of water into a small pot and bring to a boil.
- Add in the sweet potato balls and cook until they float up, then strain.
- In a small pot add in the coconut sugar, pandan leaf, and water, bring to a boil, then simmer for 3 minutes.
- Repeat the same steps for the So Good Unsweetened Almond Milk, coconut milk, pandan leaf, and salt.
- Place the sweet potato balls in a bowl, add in the sugar syrup and almond coconut milk.
