    Toast is a terrific idea for breakfast, lunch, snack or an easy dinner but you don't have to stick to plain spreads. Here's some of our favourite healthy toast topper ideas. These delicious combinations are perfect on wholemeal toast, but they are also great on muffins, crackers, toasted corn chips, wraps or even with a serve of brown rice or quinoa.

    Ingredients

    Pizza mix

    • 140g tub pizza sauce
    • 4 slices can pineapple, drained, diced
    • 2 x 125g can diced capsicum, rinsed and drained
    • ½ cup sliced black olives, rinsed and drained 
    • 1 cup grated low fat cheese

    Nachos
    • 2 tablespoons olive oil
    • 1kg potato or kumara, thinly sliced
    • 1 red onion, diced
    • 420g can black beans, rinsed and drained
    • 1 tablespoon mild nachos spice mix
    • 420g can corn kernels, rinsed and drained
    • ½ x 300g bottled mild salsa

    Bolognaise sauce
    • 1 tablespoon olive oil
    • 1 brown onion, diced
    • 2 garlic cloves, crushed
    • 1 1/2 teaspoons curry powder 
    • 400g can diced tomatoes 
    • 400g can brown lentils, rinsed and drained

    Lentil dahl
    • 1 ¼ cups dried red lentils, rinsed in cold water
    • 10g salt reduced vegetable stock cube, crushed
    • 2 tablespoons red curry paste
    • 400g can diced tomatoes
    • 410g can green beans, rinsed and drained

    Method

    1. Prepare your favourite toast topper recipe ahead of time as per instructions.  Pizza mix, Nachos, Bolognaise sauce, Lentil dahl.
    2. Toast your bread or preferred base in toaster or under grill until lightly browned.
    3. Top with your favourite topping, serve and enjoy!
