Summer sausage sandwich

    Get more plants on your plate with this delicious salad made with Vegie Delights Thick BBQ Sausages. They're a good source of iron, protein and vitamin B12. 

    Ingredients

    • 1 packet Vegie Delights Thick BBQ Sausage or Classic Hot Dogs 
    • 1 tbs reduced fat mayonnaise
    • 2 tsp seeded mustard
    • 5 wholemeal/multigrain bread, sliced down the middle 
    • ¹⁄4 cup (60ml) tomato chutney
    • 1 cup rocket leaves

    Method

    1. Heat a frypan or BBQ on high heat and cook
      Vegie Delights Thick BBQ Sausages or classic Hot Dogs for 5 minutes, turning frequently for even cooking.
    2. Whilst sausages are cooking, whisk together vegan mayonnaise and seeded mustard in a small bowl and set aside.
    3. Once sausages are ready, open up the bread rolls, spread with mustard mayo, fill with rocket leaves and sausages, top with tomato chutney and serve.
