Italian lentil hotpot

    • 1 tbs oil
    • 1 onion, chopped
    • 1 carrot, chopped
    • 1/2 tsp dried italian herbs
    • 1 cup sliced mushrooms
    • 690g bottle passata sauce
    • 2 x 425g can brown lentils, rinsed and drained
    • 375g packet commercial gnocchi
    • 1/2 cup grated cheese


    1. Heat oil in a large pot and saute onion and carrot until just soft.
    2. Add italian herbs and mushrooms and saute for 1 min.
    3. Stir through passata sauce and lentils. Bring mixture to boil then reduce heat and simmer for 10 mins until sauce is slightly thickened.
    4. Bring large pot of water to boil and add gnocchi. When gnocchi comes to surface of water remove and drain.
    5. Place lentil sauce in a casserole dish and top with gnocchi. Sprinkle with cheese.
    6. Place under griller and grill until cheese is melted.


    • Replace gnocchi with mashed potato or sweet potato for a more traditional option.
