Ingredients
- 300g silken tofu (drained and not pressed)
- 1 tablespoon maple syrup
- 1-2 tablespoons good quality cocoa powder
- 80g dark chocolate
- 4 tablespoons Sanitarium Granola
To decorate (per serving)
1 teaspoon of plant based yoghurt or low-fat, unsweetened Greek yoghurt
1 fresh berry of choice
1 teaspoon of granola
Method
Step 1
Add the drained tofu, maple syrup and cocoa powder to a high speed blenderStep 2
Melt the chocolate in a microwave-safe bowl in the microwave in 10-second intervals until the chocolate is smooth and creamyStep 3
Add the melted chocolate to the tofu mixture in the blender. Blend some more until you have a perfectly smooth mousse consistencyStep 4
Place one tablespoon of granola into each of the 4 ramekins or 4 small jarsStep 5
Scoop the mousse into each ramekin and place in the fridge for 10 minutes to setStep 6
To decorate. A small drop of low-fat, unsweetened Greek yoghurt, a berry and a sprinkle of granola
