- 1 pack Vegie Delights Schnitzels
- 500g sweet potato, sliced on the round into chips
- 150g potatoes, sliced on the round into chips
- 150g parsnips, sliced on the round into chips
- 3 tbsp extra virgin olive oil
Salad
- 2 cups shredded cos lettuce
- 1 punnet cherry tomatoes, halved
- 1 lebanese cucumber, peeled into ribbons
- 1 medium carrot, peeled into ribbons
Dressing
- 1 tbsp olive oil, extra
- 2 tbs lemon juice or white wine vinegar
Method
- Preheat oven to 220 degrees and line two baking trays with baking paper. Toss sweet potato, potatoes and parsnips in olive oil in a medium bowl and spread evenly on lined tray. Bake until cooked through, approx. 20 minutes. Set aside to cool.
- Place Vegie Delights Schnitzels on tray and cook according to pack directions. Cut each schnitzel into 4 slices.
- Toss salad ingredients together in a large bowl. Combine dressing ingredients in a small bowl and whisk. Add to salad and toss.
- Divide salad evenly among 4 bowls. Add cooked vegetable chips and schnitzel slices, and enjoy.
