Cacciatore Pasta with Chicken Style Sausages

Ingredients

  • 1 tbsp olive oil

  • 1 onion chopped

  • 2 cloves of garlic, crushed

  • 6 Vegie DelightsChicken Style Sausages, sliced

  • 1 red capsicum, chopped

  • 250g cherry tomatoes, halved

  • 1 tin no added salt chopped tomato

  • 2tbsp drained capers

  • 100g pitted Kalamata olives

  • 1 tsp of dried mixed herbs

  • 300-400g cooked wholemeal pasta

  • fresh basil leaves chopped to serve

Method

  1. Heat the olive oil in a large pan and sauté the onion and garlic for a few minutes until softened. 
  2. Add the vegie sausage slices, capsicum and cherry tomatoes and fry for a few minutes so that the vegie sausage slices are browned slightly.  
  3. Add the tinned tomatoes, capers, olives and dried herbs and simmer for 15 - 20 minutes, so that the sauce reduces and starts to thicken together.
  4. Pour in the pasta to heat through and top with fresh basil to serve.
