Ingredients
- 2 ears of corn
- 1 small carrot, diced small
- 1/2 cup chopped spring onion
- 2 cloves minced garlic
- 1 Tbs finely chopped onion
- 3/4 cup gluten-free flour
- 2 Tbs rice flour
- 1/4 tsp salt
- 1/4 tsp black salt
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- 1/4 tsp black pepper
- 1/2 cup So Good Soy Regular
- 2 tsp grapeseed oil (if baking)
- 6 tsp grapeseed oil (if pan frying)
- Handful of cilantro (for topping)

Method
Baking:
- Pre-heat the oven to 180 degrees Celsius
- Cut the corn from the cob and place in a bowl in the carrot, onion, spring onion, and garlic, then mix.
- In a separate bowl mix all the dry ingredients.
- Add in the dry mix into the vegetable mix until we coated.
- Add in the So Good Soy Regular until well mixed, then add in the grapeseed oil.
- Spread 1/4 cup patties into a non-stick mat on a baking tray.
- Bake for 20 minutes.
- Top with cilantro.
Pan Frying:
- Cut the corn from the cob and place in a bowl in the carrot, onion, spring onion, and garlic, then mix.
- In a separate bowl mix all the dry ingredients.
- Add in the dry mix into the vegetable mix until we coated.
- Add in the So Good Soy Regular until well mixed.
- Pre-heat a pan to medium-low heat, place 1/2 tsp oil.
- Spread 1/4 cup patties and cook until golden brown, then flip and cook the other side.
- Repeat for all of the batter.
- Top with cilantro.
