Perkedel Jagung (Indonesian Baked Corn Fritters)

    Ingredients

    • 2 ears of corn
    • 1 small carrot, diced small
    • 1/2 cup chopped spring onion
    • 2 cloves minced garlic
    • 1 Tbs finely chopped onion
    • 3/4 cup gluten-free flour
    • 2 Tbs rice flour
    • 1/4 tsp salt
    • 1/4 tsp black salt
    • 1/2 tsp cumin powder
    • 1/4 tsp turmeric powder
    • 1/4 tsp black pepper
    • 1/2 cup So Good Soy Regular
    • 2 tsp grapeseed oil (if baking)
    • 6 tsp grapeseed oil (if pan frying)
    • Handful of cilantro (for topping)

    Method

    1. Step 1

      Pre-heat the oven to 180 degrees Celsius

    2. Step 2

      Cut the corn from the cob and place in a bowl in the carrot, onion, spring onion, and garlic, then mix.

    3. Step 3

      In a separate bowl mix all the dry ingredients.

    4. Step 4

      Add in the dry mix into the vegetable mix until we coated.

    5. Step 5

      Add in the So Good Soy Regular until well mixed, then add in the grapeseed oil.

    6. Step 6

      Spread 1/4 cup patties into a non-stick mat on a baking tray.

    7. Step 7

      Bake for 20 minutes.

    8. Step 8

      Top with cilantro.
