Coconut Tapioca Pudding

    Ingredients

    • 2 ¼ cup water
    • 2 pandan leaf
    • ½ cup small sago
    • ½ cup So Good Soy Regular
    • 2 Tbs lite coconut Milk
    • Pinch of salt
    • ¼ cup coconut sugar

    Method

    1. Step 1

      In a pot, bring the water and pandan leaf to a boil, then simmer for 3 minutes.
    2. Step 2

      Remove the pandan leaves.
    3. Step 3

      Add in the sago, So Good Soy Regular, lite coconut milk, coconut sugar, and salt.
    4. Step 4

      Simmer for 10-15 minutes, stirring often.
    5. Step 5

      Remove from heat and let cool.
    6. Step 6

      Serve warm or chilled and top with your choice of fruit.
