Step 1
Steam or boil the sweet potato until soft.Step 2
Mash the sweet potato until free of lumps.Step 3
Add in the tapioca starch and mix until well combined and you have a firm dough.Step 4
Divide and roll into 1-inch balls.Step 5
Add 1 liter of water into a small pot and bring to a boil.Step 6
Add in the sweet potato balls and cook until they float up, then strain.Step 7
In a small pot add in the coconut sugar, pandan leaf, and water, bring to a boil, then simmer for 3 minutes.Step 8
Repeat the same steps for the So Good Unsweetened Almond Milk, coconut milk, pandan leaf, and salt.Step 9
Place the sweet potato balls in a bowl, add in the sugar syrup and almond coconut milk.
