Biji Salak (Sweet Potato Balls)

    Ingredients

    150g sweet potato

    ¼ cup tapioca starch

    ½ cup water

    2 tbs coconut sugar

    2 pandan leaves

    ¼ cup So Good Almond Unsweetened Milk

    2 Tbs low fat coconut milk

    pinch of salt

    Method

    1. Step 1

      Steam or boil the sweet potato until soft.
    2. Step 2

      Mash the sweet potato until free of lumps.
    3. Step 3

      Add in the tapioca starch and mix until well combined and you have a firm dough.
    4. Step 4

      Divide and roll into 1-inch balls.
    5. Step 5

      Add 1 liter of water into a small pot and bring to a boil.
    6. Step 6

      Add in the sweet potato balls and cook until they float up, then strain.
    7. Step 7

      In a small pot add in the coconut sugar, pandan leaf, and water, bring to a boil, then simmer for 3 minutes.
    8. Step 8

      Repeat the same steps for the So Good Unsweetened Almond Milk, coconut milk, pandan leaf, and salt.
    9. Step 9

      Place the sweet potato balls in a bowl, add in the sugar syrup and almond coconut milk.
