  • 1 Tbsp Dijon mustard

Pastry Wash (Optional)

  • 1 Tbsp almond or soy milk
  • 1 tsp sunflower oil
  • ½ tsp maple syrup or brown rice syrup

Miso Gravy

  • 1 Tbsp olive oil
  • 1 shallot, finely diced
  • 2 Tbsp flour
  • ¼ cup reduced salt vegetable stock
  • ¾ cup water
  • 1 Tbsp white miso
