For the rice 

  • 2 cups (400g) uncooked basmati or brown rice 
  • 1 Tbsp neutral oil (e.g. canola, grapeseed) 
  • 1 tsp garlic, minced 
  • ½ cup (40g) onion, diced 
  • ½ cup (40g) carrot, diced 
  • 1 ½ Tbsp salt-reduced soy sauce 
  • ½ tsp raw sugar 
  • ¼ tsp white pepper 
  • 3 cups (750ml) water 
  • ½ cup (60g) green beans, sliced 
  • ½ cup (60g) frozen green peas 
  • ½ cup (80g) red capsicum, diced 
  • 3 spring onions, thinly sliced (green part only) 
  • 1 cup (100g) lettuce, sliced 

For the tofu 

  • 350g firm tofu, cut into 1-inch cubes 
  • ½ tsp iodised table salt 
  • ¼ tsp crushed black pepper 
  • 1 tsp Chinese 5-spice powder 
  • 1 Tbsp corn starch 
  • 1 Tbsp neutral oil
