  • 1/2 cup beetroot hummus dip (see below)
  • 1 medium tomato sliced
  • 20g baby spinach leaves
  • 100g reduced fat feta cheese
  • 10g chopped fresh parsley

Beetroot Hummus Dip:

  • 1 can no added salt chickpeas, drained
  • 1 small beetroot, peeled and roasted
  • 1 clove garlic
  • 2 tbs tahini
  • Juice of 1/2 lemon
  • 40-60ml olive oil
