Vegan Party Sausage Rolls

    Ingredients

    • 1 pack Vegie Delights Vegie Sausages
    • 2 Tbsp olive oil
    • 1 (130g) brown onion, grated or finely diced
    • 1 (120g) carrot, grated
    • 1/2 cup cooked quinoa
    • 1/4 cup (50g) sunflower seeds
    • 1/4 cup quick oats
    • 2 sheets reduced fat puff pastry

    Method

    1. Mash Vegie Delights Sausages with a fork, crumbling into small pieces.
    2. Drizzle olive oil into a frypan over medium heat. Add onion and carrot and cook, stirring frequently, for 3 - 5 mins – or until softened.
    3. Add sausage crumbles to pan and stir to combine. Turn off heat, add quinoa, sunflower seeds, and oats, and mix well. Cool mixture completely.
    4. While filling mixture cools, pre-heat oven to 200°C. Line a baking tray with baking paper.
    5. Cut both sheets of puff pastry in half lengthwise. Spoon a quarter of the sausage roll mixture along one long edge of a pastry half. Brush opposite edge with a bit of water, roll to enclose filling, and press the seam with the tines of a fork to seal. Repeat with remaining pastry halves and filling.
    6. Cut each filled log into 6 pieces. Arrange sausage rolls seam-side down on the prepared tray, and bake 20 minutes, or until crisp and golden.

    Tips

    • For a smaller sausage rolls, cut each log into 8 pieces,
    • If your pastry is very soft, pop the filled log back in the fridge for 10 mins before cutting.
