- 1 tbs oil
- 1 medium onion, chopped
- 2 cloves garlic, crushed

- 500g dried red lentils
- 7 cups water
- 850g can chopped tomatoes (reduced salt)
- 415 can tomato soup (reduced salt)
- 1 tsp salt
- 2 courgette, grated

Red lentil and tomato soup

Method
- Heat oil in a large saucepan and saute onion, garlic and spices.
- Add washed lentils, water, tomatoes and tomato soup and bring mixture to the boil.
- Reduced heat and simmer for 15 minutes. Add courgette and salt and simmer a further 5 minutes.
