Creamy kumara pasta

    A tasty kumara pasta with a delightfully creamy texture. High in calcium, fibre and protein, this is simple dish that is good for you as well.

    Ingredients

    • 250g pasta, cooked
    • 400g kumara, peeled and chopped
    • 2 tbs oil
    • 1 onion, chopped
    • 1 clove garlic, finely chopped
    • 1 tsp vegetarian green curry paste
    • 250ml evaporated milk
    • salt and pepper to taste

    Method

    1. Brush kumara with oil and roast, in a hot oven (220°C) until soft.
    2. Saute onion, garlic and curry paste in 1 tsp oil. Add the kumara and remaining ingredients. Simmer until liquid is slightly reduced and season to taste.
    3. Serve over cooked pasta.

    Tips

    • To make this sweet potato pasta gluten free, simply use gluten free pasta instead of wheat pasta.
    • Remember to always check the label of each ingredient to ensure it is gluten free.
