Creamy coconut rice

    A simple yet satisfying dessert which is great for warming up on those cool winter evenings.


    • ½ cup short grain or arborio rice
    • 1L Almond Coconut Milk Unsweetened
    • 2 tbs agave nectar
    • 1 tsp vanilla


    1. Place rice, Almond Coconut Milk, agave nectar and vanilla in a heavy based saucepan.
    2. Bring mixture to the boil over medium heat, then reduce heat and simmer until mixture has thickened.
    3. Serve with fruit of choice and toasted coconut flakes.

    • Agave nectar can be substituted with sugar if desired.
