- 70g chopped walnuts, lightly toasted
- 70g almonds, lightly toasted
- 2 tbs linseed, sunflower seeds, or pumpkin seeds
- 170g dates, pitted, chopped
- 100g soft dried apricots or figs, chopped
- 100g cranberries, pitted and chopped
- 50g goji berries (optional)
- 1 tbs Sanitarium Smooth Peanut Butter
- 1 orange, zest of
- 2 tbs raw cacao powder or cocoa powder
- 1 tbs ground cinnamon
- 50g Skippy™ Cornflakes, crushed

Ingredients
Method
- Combine the walnuts, almonds and seeds in a food processor and whizz until fine crumbs. Add the dates, apricots, cranberries and goji berries and blend until a smooth paste.
- Add the peanut butter, orange zest, cacao or cocoa powder and cinnamon. Pulse for two minutes or until the mixture starts to form into a ball.
- Divide into golf ball-sized portions and roll into balls between lightly wet palms. Roll in the crushed Skippy™ Cornflakes.
- Store in an airtight container in the fridge for up to two weeks, or freeze for longer storage.
Tips
- Goji berries can easily be substituted for sultanas or any other dried fruit.
- Raw cacao powder is found at gourmet supermarkets and health food stores.
