Cauliflower soup

    • 1 tbsp olive oil, plus extra for garnish
    • 1 ½ tsp cumin seeds
    • 1 large onion, chopped
    • 1kg cauliflower florets
    • 1½ cups So Good Regular soy milk
    • 1/2 cup water, plus more as needed 
    • 1½ vegetable stock cubes
    • ¼ tsp salt (optional)


    • 1 tsp fresh parsley
    • 1/8 tsp freshly cracked black pepper


    1. Preheat oven to 200°C. Mix the cauliflower, onion, cumin and oil together. Roast for 30 mins or until lightly charred. 
    2. Add the roast veggies, milk, water, stock cubes and salt to the Vitamix blender. Blend on the soup setting until smooth and hot. Check the consistency and add more water during or after blending if needed. 
    3. Top with fresh parsley, black pepper and a drizzle of olive oil.
