Banana Pancake Bites

    Tender bite-sized pancakes with an outer pancake batter and cereal crunch.

    Ingredients

    • 2 bananas, sliced into 5 cm thick medallions
    • 1/2 cup wholemeal flour
    • 1/2 cup So Good™ Oat Milk No Added Sugar
    • 1 teaspoon baking powder
    • 1 teaspoon white sugar
    • 1 teaspoon vanilla extract
    • ½ teaspoon cinnamon
    • 6 tablespoons Sanitarium™ Cluster Crisp™ Vanilla & Almond
    • Optional* cooking spray for frying

    TO SERVE:

    • 1/2 cup fresh blueberries
    • 1 teaspoon maple syrup

    Method

    1. Step 1

      To a bowl, add the flour. Whisk in oat milk, baking powder, white sugar, vanilla extract, and cinnamon. Fold in Sanitarium Cluster Crisp Vanilla & Almond.
    2. Step 2

      Slice the bananas to 5 cm medallions.
    3. Step 3

      On medium heat, heat a non-stick frying pan or add a little cooking spray.
    4. Step 4

      Using a fork, dip the bananas into the pancake batter and place them in the pan.
    5. Step 5

      Repeat until the pan is filled with coated bananas.
    6. Step 6

      Fry until golden and flip.
    7. Step 7

      Serve in a bowl with fresh blueberries and maple syrup.
