    Ingredients

    Dry Ingredients:

    • 1 cup wholemeal flour
    • 1 Tsp baking powder
    • Pinch of salt

    Wet Ingredients:
    • 2 Tbs raw sugar
    • 1 Tbs grapeseed oil
    • 1 cup + 2 Tbs So Good Almond Unsweetened

    Filling:
    • 2 tsp vegan butter
    • 4 Tbs crushed peanuts
    • 4 Tbs creamed corn
    • 2 bricks Weet-Bix Original Cereal
    • Liquid sweetener to taste

    Optional:
    • 2 tsp canola oil for cooking

    Method

    1. Step 1

      Sift the dry ingredients into a bowl and mix.
    2. Step 2

      Mix the wet ingredients together.
    3. Step 3

      Pour the wet mix into the dry mixture and mix well.
    4. Step 4

      Pre-heat a pan to medium low heat.
    5. Step 5

      Pour 1/4 of the batter onto the pan and cook until the whole pancake is dry, no need to flip.
    6. Step 6

      Repeat with the rest of the batter.
    7. Step 7

      Spread the vegan butter on the pancakes, then fill with crushed peanuts, creamed corn, crushed Weet-Bix Original Cereal, and sweeten to taste.
