Vegie Schnitzel sandwich with kale coleslaw

    • 1 packet Vegie Delights™ Schnitzels
    • 8 slices wholemeal sourdough bread, toasted
    • 1 avocado, sliced or mashed


    • 3 stalks kale, centre remove and leaves thinly sliced
    • 1/4 red cabbage, thinly sliced
    • 3 spring onions, thinly sliced
    • 1 handful parsley, chopped
    • 2 medium carrots, grated
    • 1 green apple, finely chopped


    • 1/3 cup reduced-fat Greek Yoghurt
    • 1 1/2 Tbsp mayonnaise
    • Juice of one lemon
    • 1 tsp apple cider vinegar

    Freshly ground black pepper, to taste


    1. Preheat oven to 180°C. Place the Vegie Delights Schnitzels on a baking paper lined tray. Bake for 10-12 minutes, turning once halfway through, until golden and crisp.
    2. Combine all slaw vegetables in a large bowl. In a small bowl, whisk together the dressing ingredients. Pour dressing over slaw, stir to evenly coat, and season to taste with pepper.
    3. Spread four slices of toasted sourdough with avocado. Top with coleslaw, warm schnitzel, and remaining slices of sourdough. Cut into squares or triangles to serve.
