BBQ Roasted Vegies

    • 1 pack of Vegie Delights Thick BBQ Sausages
    • 2 Tbsp of olive oil
    • 1 red onion, quartered
    • 2 small zucchinis, sliced
    • 5 finger eggplants, sliced
    • 200g of Swiss brown mushrooms
    • Various coloured capsicums, cubed
    • 250g of cherry tomatoes
    • Pepper
    • Fresh basil leaves or pesto to garnish


    1. Cook Vegie Delights Thick BBQ Sausages as per cooking instructions.
    2. Heat the BBQ flat grill to medium. Prepare vegetables, drizzle with olive oil and season with pepper. Cook for 5-6 mins until golden and cooked through.
    3. Garnish sausages and vegetables with fresh basil leaves or pesto. Serve.
