- 1 pack Vegie Delights™ Thick BBQ Sausages
- 2 Tbs of olive oil
- 1 red onion, quartered
- 2 small zucchinis, sliced
- 5 finger eggplants, sliced
- 200g of Swiss brown mushrooms
- 1 red and 1 yellow capsicum, cubed
- 250g of cherry tomatoes
- Pepper
- Fresh basil leaves or pesto to garnish

Step 1
Heat a medium frypan or BBQ grill to medium. Cook Vegie Delights™ Thick BBQ Sausages 6-7 minutes, turning frequently. Remove from pan and keep warm.Step 2
Add oil and vegetables to pan, and season with black pepper. Cook for 5-6 minutes until golden and cooked through.Step 3
Garnish sausages and vegetables with fresh basil leaves or pesto. Serve.
