- 1 pack of Vegie Delights Thick BBQ Sausages
- 2 Tbsp of olive oil
- 1 red onion, quartered
- 2 small zucchinis, sliced
- 5 finger eggplants, sliced
- 200g of Swiss brown mushrooms
- Various coloured capsicums, cubed
- 250g of cherry tomatoes
- Fresh basil leaves or pesto to garnish
BBQ Roasted Vegies
- Cook Vegie Delights Thick BBQ Sausages as per cooking instructions.
- Heat the BBQ flat grill to medium. Prepare vegetables, drizzle with olive oil and season with pepper. Cook for 5-6 mins until golden and cooked through.
- Garnish sausages and vegetables with fresh basil leaves or pesto. Serve.
