Tasty apple peanut muffins

Fresh apple with peanut butter – what a combination! These tasty muffins are ideal to make ahead for a filling and satisfying snack through the week.

Ingredients

  • 1 cup self- raising wholemeal flour
  • 1/4 cup raw caster sugar
  • 1 small red apple, diced
  • 1/3 cup peanut butter, no added sugar or salt
  • 50g of margarine, melted
  • 2 x 60g eggs
  • 1/3 cup low fat natural Greek style yoghurt
  • 1 tsp vanilla extract
  • pinch ground cinnamon

Method

  1. Step 1

    Preheat oven to 190ºC fan forced.  Place (90ml) muffin cups on a flat tray.

  2. Step 2

    Combine the flour, sugar and apple in a large mixing bowl.

  3. Step 3

    Add the peanut butter, melted butter, eggs, yoghurt, vanilla and cinnamon.

  4. Step 4

    Combine together without over mixing.

    Fill the muffin cups 3/4 full with the batter and bake 20 minutes or until golden.
