Ingredients
- 2 medium onion
- 5 cloves garlic
- 2 thumbs ginger
- 2 Tbs grapeseed oil
- 1 tsp cumin powder
- 2 Tbs curry powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 reduced sodium vegetable bouillon
- 1/4 cup water
- 1 small pineapple or 425g tin of pineapple slices in juice
- 1/2 cup chopped celery
- 3 small capsicum
- 1 whole cauliflower
- 300g tofu
- 1/4 cup lite coconut milk
- 1 cup So Good Oat Unsweetened
- Coriander (topping)
Method
Step 1
In a food processor or blender, blend the onion, garlic, celery, and ginger until you have a paste.Step 2
In a pot, preheat the grapeseed oil then add in the paste and sauté until slightly translucent.Step 3
Add in the cumin and curry powder and mix well, cooking for 1-2 minutes.Step 4
Simmer for 5-10 minutes or until the cauliflower is nice and tender.
